I am bouncing off SharkFan's Kim Possible Movie thread, where I was just saying I didn't find the show as good as I remembered. Unfortunately this principle is true for so many kids shows, that when viewed with adult eyes, the characters and writing really don't seem as high of quality.
I have mentioned my love for Rugrats and Arthur before in posts/a stream, as these shows in my opinion are as good or even better now than they were when I was younger. There are a lot of pop culture references in both, and just generally some higher level thinking concepts.
I feel similarly about a lot of Disney's animated feature films. I had a hard time sitting through films like Beauty and the Beast as a child, but enjoy them more now.
I'm sure I will think of some more.
What can you guts still watch, nostalgia factor aside, that does not insult your intelligence?

Honestly rarely do cartoons I watched as a kid make me cringe as an adult. It really depends on the show, not just being older. A good cartoon is good when it can both appeal to kids and their parents.
With that said shows mainly that comes to mind right now is the grim adventures of Billy and Mandy. That show is honestly MORE funny to watch as an adult then as a kid XD
Spongebob, at least the classic episodes....because spongebob is godly
And jimmy neutron, I was worried it wouldn’t be as enjoyable anymore but I was wrong, the show still holds up, even the animation is not that bad, it helps that at the time I would say it was one of THE best CGI cartoons designing wise.

I haven't watched any of my favourite childhood shows in quite a long time, but one show which I think would be good to re-watch would be Seasons 1-3 of Spongebob. I pretty much stopped watching cartoons when I was 9, however I continued re-watching the old episodes of Spongebob until I was about 12. The earliest seasons were witty and had humour which appealed to older audiences.

I actually do rewatch occasionaly a few episodes of shows that I enjoyed watching as a kid even though I usually regret afterwards because it kind of ruin the good impression it left on me as I grew out of them since. Courage the Cowardly Dog is probably the show that stood the most the test of time and that I still enjoy as an adult.

I'll add Dave the Barbarian, an underrated show.
There's also a handful of sketches from the Amanda Show that can still really get me to laugh.
