By this I mean artists that constantly and completely change their sound in order to accommodate to the hottest mainstream style of the moment.
Jennifer Lopez would be a great example of that. She went from late 90s trancy dance-pop...
...to early 2000s urban pop...
...to the Gogo-inspired R&B style of the mid-00s like "Crazy in Love"/Amerie's "1 thing"...
...to early 2010s electropop.
Can y'all think of other examples like this?

Does Britney Spears fit into this category? She's more of a trendsetter actually in my opinion! She was the first to drop that squeeky clean Y2K teen idol image in 2001, her 2007 stuff was pretty out-there for the time (even in the wave of Timbaland/electronized R&B) and she was one of the first to mix her pop with dubstep back in 2011. Even her most iconic hit "Toxic" is pretty weird and standout as far as pop music goes when you look more closely into it.
