I think this trend is on its way out enough now that we can talk about it as a retrospective. Unicorn everything seemed to be at its peak in early 2017, but it was gaining enough prominence in the prior years that I feel comfortable calling it a mid 2010's trend. (If you'd rather call it late 10's I do not care.)
One aspect of this trend I find interesting now is how it retained some of the sparkly glam aspects of the 2000's, but was far more innocent. It accompanied the festival trend, arguably taking over some of its other aspects that faced appropriation issues. As perceived tackiness in most elements of decor grew increasingly outdated, the soft pastels of unicorns and other mystical creatures, such as mermaids, remained a light retreat. The colorful food especially seemed to work well for instagram at the time. Onesies had become popular, and colorful hair was growing in popularity. The emoji trend, especially poop, didn't hurt.
Maybe the 2010's aesthetic wasn't actually as dull or sterile as selectively colorful.
Was 2017 peak rainbow? We're at a point in the trend cycle where it's not so exciting anymore, but there really was a minute where it felt like you could practically find unicorn anything. It will be interesting to see whether history remembers this side of the 2010's or the more serious side.

There was a vocal narwhal fandom in the early 2010's. But these are unicorn consumer products.

It lines up with the pastel goth aesthetic that was popular from around 2014 to 2016 pretty well

NightmareFarm is partially right, it DID start in the early 2010s. IMO, this was one of those things that lasted from the early to mid-2010s, and IMO was really a byproduct of the colorful pastel rainbow aesthetics of the early 2010s, that happened to carry over into mid 2010s. I suspect it was a byproduct of the overall "quirkiness" of the era.

I remember how anything that was pastel rainbowy in the mid-2010s (2017 would probably be the peak of this) was called "unicorn" It's kind of a nice color palette tbh
