I'm not sure if I've asked you this question before, but what's the North-East coast of Tasmania like? Is it worth checking out?
Sorell is the furthest north I have traveled (on the east coast), so I have never been to towns such as Swansea or Bicheno before.

I have have only been to Swansea a few times before and Bicheno once (when I was a kid), but they are definitely worth a visit when you travel down to Tasmania again. Coles Bay (Freycinet National Park etc) along with Scottsdale (Bridport) are lovely places to visit. Further back to Orford is quite nice too.

Bay of Fires which extends from Binalong Bay to Eddystone Point I would recommend also.

If you had the choice to live anywhere in Tasmania, where would you choose to live and why? I’m pretty content with where I live now to be honest. Unless I decided to move back to the mainland in the future, I couldn’t see myself living anywhere else within the state.

You mean besides killing trashy prostitutes and the like by either running them down by vehicle or shooting them up? Yep. I like to fully explore the land I guess. Though not necessary, I also really like doing all the side missions. Speaking of, I like taking a Cargo Plane (you can obtain one in free roam using a save editor) or a Jet (Boeing 747) and seeing what places I can land at which is not an airport.
