Late 1990s and or Y2K era: Max Martin ? Early 2000s: The Neptunes Mid 2000s: Jermaine Dupri Late 2000s: Timbaland Early 2010s: Red One Mid 2010s: DJ Mustard ? Late 2010s: Metro Boomin
I am unsure about Y2K era backwards, mid 2010s and early 2020s.
Edit: For fun, how would you describe their sounds? When you listen to any of their songs, could you tell who produced them?
Max Martin: Maximalist and upbeat (Think any teen pop song from 1999 and 2000, a bit earlier and a bit after.) Yes I can tell.
The Neptunes: Sugary and sweet twinkle with hip-hop edge (Think Nelly’s “Dillemna” from 2002.) Yes I can tell.
Jermaine Dupri: Dark and gritty crunk (Think Usher’s “My Boo” from 2004) Yes I can tell.
Timbaland: Avant-garde (got this from Google lol) Yes I can tell.
Red One: Loud abrasive synths and drops. Yes I can tell.

I think for the mid 00s I would put Jermaine Dupri. He produced songs for Mariah Carey, Usher, Nelly and many others at that time
For the late 10s I’d say Metro Boomin

Mid-late 80s were the music domain of SAW ( stock, aitken, waterman)
They gave birth to the careers of Kylie Minogue, Rick Astley, bananarama and many others
Some of the hit songs they made:
1986-1990 were the golden years of SAW

The only ones who come even close to SAW is dr.luke + max martin, or max martin + shellback, or dr.luke + max martin + shellback (shame they only produced one song as trio: Hot N Cold by katy perry)
But Stock, Aitken and waterman were music powerhouses

The 1960s had two major iconic producers.
First, Phil Spector who revolutionized pop music with his dense wall-of-sound approach to pop productions and unforgettable hooks.
Second, Motown's Holland-Dozier-Holland who seamlessly blended pop and soul to make a very distinctive and memorable production style.
Motown wouldn't have been quite the same without them.

Stock, Aitken and waterman's had that classic bubbly, eletronic, upbeat, loud, showy, cheesy late 80s sound, I don't think i need to explain what it sounds like
When people think "late 80s music" they're probably thinking of a SAW-sounding song
But they were also ahead of their times with this song
It came out in 1986 but sounds more like 1989-1992
It's like a mix of "pump up the jam" and "vogue"

I’m unsure on the accuracy of these, but I think:1) The Neptunes overtook Max Martin anywhere between October 2000 and July 2001. 2) Jermaine Dupri overtook The Neptunes anywhere between April 2003 and July 2004. 3) Timbaland overtook Jermaine Dupri anywhere between April and October 2006. 4) Red One overtook Timbaland anywhere between April 2008 and October 2009. DJ Mustard took over around late 2013, then Metro Boomin took over around late 2015 through 2017, then Tay Keith in 2018. Right now there's a bunch of producers who are huge so it's hard to say who's the biggest. DJ Mustard: loud synths and "hey hey hey" Metro Boomin: dark minimalistic trap beats

His beat gives a off a Halloween vibe, especially his 2015-2017 work.
