The two I can think of are Amon Tobin and Squarepusher.
What I like about Amon Tobin’s 1996-2003 works is that the production sounds reminiscent of a cool 1970s movie soundtrack. I haven’t listened to or discovered his latest works yet.
What I like about Squarepusher’s 1997-2001 works is that it sounds futuristic and digital.

There's too much eurodance, house, hip house/techno/garage house/progressive house/happy hardcore/jungle/breakbeat/rave/gabber/big beat/early trance/drum'n'bass/drill'n'bass in their pure 90s form to list out. Also lot of artists just produced a number of singles as well and that's it. A lot of the earlier stuff, not all, was like gone, altered from its original style or dated by 97-99.
For popular electronica a lot of the stuff that came around in the mid 90s 1994-1996ish, sometimes a bit earlier/later, and remained popular to some extent or increased in popularity in the Y2K/early 2000s/the 2000s would be:
