Here’s my take:
Spinoff: Centers on a certain character from a TV show.
Example: Cory in the House is a spin off of That’s So Raven
Reboot: I’m unsure. Don’t know if this is about movies and or TV shows.
Rehash: Copying same story line from past show?

Spinoff normally doesn't center on the main character of the first show, a reboot would. Idk about rehash.

I’ve been under the impression that a reboot is when a show has been done for a long time and then it starts again, like what happened with Roseanne

A Spin-off is a continuation of the original storyline in some way.
Ex: Cory in the House is a spin-off of That’s So Raven, The Hobbit is a spin-off of Lord Of The Rings
A reboot is a resetting of the old storyline with maybe some minor tweaks and a different cast.
Ex: The Andrew Garfield Spider-Man movies were a reboot of the Tobey Maguire Spider-Man movies, and the Tom Holland Spider-Man movies are a reboot of both
Rehash: When the (mostly) original cast and storyline are brought back but in a new way/shape/form for a new audience.
Ex: Fuller House is a rehash of Full House, iCarly (2021) is a rehash of the original icarly (2007)

A reboot is the revival and reimagining of an old work, like say the 90s Adams Family movies are a reboot of the 60s TV show.
A rehash is not really a specific term used for cinema/TV, just a general term to say something feels uninspired and copying old formulas. A "remake" is a more technical term if you want to refer something recreating an old work in a more or less faithful way.
A spin-off is taking the characters or setting of a show or movie (usually the secondary characters) and focusing on a story that usually drifts completely from the original work, like say Better Call Saul is a spin-off of Breaking Bad.
