If you're talking about graphically colorful then
5th gen (PS1/N64/GBColor/Saturn) 6th gen (GameCube/PS2/Xbox/GBA) 8th & 9th gen (PS4/Xbox One/Wii U/3DS/Vita/Switch & PS5/Series X-S) 7th gen (Wii/PS3/360/DS/PSP) 4th gen (SNES/Genesis/GB) 2nd gen (Atari 2600/Coleco Vision/etc.) 3rd gen (NES/Master System/Atari 7600) 1st gen (Pong clones/Magnavox Odyssey)

5th gen was the most colorful Enough said Rayman is another 5th gen platformer (an early 2D one at that) that I can think of that has a lot of colour to it. Had gotten back to it recently through the fan-made Rayman Redemption (which adds to the original and well worth checking out).

Had gotten back to it recently through the fan-made Rayman Redemption (which adds to the original and well worth checking out). Rayman came out in 1995, and at that time, 3D platformers still weren't really a thing yet. So even cutting-edge 5th gen systems still mostly had 2D platformers. Gex is another example, being released for the 3DO in 1995. Honestly, the 90s in general I think was far and away the most colorful decade for gaming.

Generally the higher the gen the more colourful games are because there are literally more colours available to be represented in pixels.
